Chirashi literally means “to scatter” which is what we do but with the kind of precision that our sushi artisans use for whatever dish they’re turning their hands to.

First, they take our signature sushi rice and press it into the bowl. Next, they place layers of chirashi salmon around the edge. Finally, they put the raw tuna at the centre and add a sprinkle of sesame seeds.
