Sushi storage: Once cool, you can keep your sushi rice fresh for up to a day. Store inside a sealed container or cover with a wet cloth to stop your rice drying out.
Ingredients
500g sushi rice
600ml water
120ml sushi vinegar
Method
Step 1
Put all the rice in a bowl and rinse 3-4 times until the water runs clear. Drain excess water with a sieve to remove excess starch
Step 2
Transfer the rice into a rice cooker and add 600ml water, wait until cooked. Leave the rice to rest for 10 minutes with the lid still on.
Step 3
Transfer into a pan and add 600ml of water. Bring to the boil then reduce heat to low and cover. Wait until all the water is absorbed (around 15min).
Turn off the heat and leave to rest for 10 minutes.
Step 4
Mix the rice with 120ml of sushi vinegar whilst it is still warm before letting it cool down. Mix it from time to time so it doesn’t dry out.
